Irish Valley Cheddar
A seasonal old-fashioned cheddar available for a limited time. This recipe has been used in the Cook family for generations. Using the milk of pastured cows, this mellow white cheddar has a beautiful green wax as vibrant as Wisconsin’s spring countryside.
Bonnie Buell shares her family history and what makes this variety so special:
“My father and mother bought Irish Valley Cheese factory in 1944. Sid and I (and our two older siblings) grew up there. My parents lived there for about 30 years before my dad retired and Sid took over. We always had a white mild cheddar (like Irish Valley cheddar) at the factory for neighboring farmer’s and patrons to purchase. Dad always had a yellow cheddar (aged) as well. We ate cheese everyday and could always tell the difference between aged and mild cheddar because of the color. To this day it is very nostalgic for me to sell Irish Valley Cheese……It’s like stepping back in time.”
